Crockpot Cilantro Lime Chicken Bowls

I started making this recipe to curb my Chipotle addiction. My husband and I were eating out all of the time, but we still wanted to eat something at least semi-healthy. So Chipotle we went!


When we started budgeting, we knew that we had to come up with something similar that we could easily do at home. So I stumbled upon this receive from WhoNeedsACape, and adapted it for our tastes!


For meal prep, start with labeling your Ziploc bags and attaching your bags to the Jokari Baggy Rack Storage Bag Holder (you probably know by now my obsession with these). Please note: we always put this whole recipe in one bag becuase we like having leftovers for lunches after we cook. However, if you do not want quite so many leftovers, I would advise splitting this recipe between 2 ziploc bags to freeze.


For this recipe, I have cooked my chicken 2 different ways. I have put whole chicken breasts into the crockpot and shredded them at the end, and I have also grilled the chicken, diced them, and put them in the bag to freeze. Both are good, but if you want more flavor and have a bit more time, the grilling method would be my preference!


After you decide how you would like to cook your chicken, you simply dump all the ingredients in the ziploc bag to freeze or in the crockpot to cook immediately!


Typically we also cook some brown rice and try to mimic Chipotle bowls, by adding brown rice, the cilantro lime chicken mixture, salsa, shredded cheese, and sour cream! If you want to use this to meal prep some extra lunch (like we normally do), I would recommend getting your tupperware and putting rice first followed by shredded cheese, chicken mixture, then salsa. I put the shredded cheese in the middle so when you heat up your dish it doesn’t just get stuck to the top or melt off to the sides. If you want sour cream, keep it in a separate container. This will allow you to just pop your tupperware into the microwave to heat up!


We have also done burritos using whole wheat wraps or tortillas, and they are great as well! Not quite and convenient to take to work as a chicken bowl, put great for something a little different at home!


If you have a Chipotle addiction like I did, I hope this helps. If you do not have a Chipotle addiction, count your blessings, and I hope you enjoy!

Crockpot Cilantro Lime Chicken Bowls


  • 4 boneless, skinless chicken breasts
  • 3 tbsp olive oil
  • 4 limes juiced
  • 2 cups cilantro finely chopped
  • 24 oz frozen corn
  • 4 cloves garlic minced
  • 2 cans black beans rinsed and drained
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 tbsp chipotle powder

Optional for making bowls

  • 1-2 cups brown rice
  • salsa
  • sour cream
  • shredded cheese


For Meal Prep

  1. Label Ziploc Bag(s) and insert into the Jokari Baggy Rack Storage Bag Holder.

  2. Decide how you prefer to have your chicken. Then add all ingredients into your Ziploc Bag(s). 

  3. Seal bag tightly and freeze.

For Cooking

  1. Put all of your ingredients in your crockpot! (Don't forget your crockpot liner if you use them!)

  2. Cook on low for 8 hours.

  3. If you choose to put whole chicken breast in your recipe, then remove your lid and shred your chicken. Mix well.

  4. Assemble your bowl or burrito, and enjoy!
